The Underdog - Espresso

The Underdog is our house espresso blend featuring coffee specially chosen to deliver a sweet and syrupy espresso. We have tailored this blend to put a modern twist on the classic espresso. The Underdog is a blend composed of coffee from all three of the major growing regions; Latin America, East Africa and Indonesia. We continually taste and adjust this blend and each of its components to maintain the balance of flavours.

We’re not claiming perfection: we’re pursuing it. No matter what beans are in season, The Underdog will remain a sweet, syrupy, and balanced espresso blend that is delightful with or without milk.

For those of you at home who would like to brew along with us, here is the current recipe we use for dialing in Underdog:

• Dose Weight: 19g
• Shot Weight: 30g
• Time: 30s

If you're new to espresso preparation dose weight refers to how much coffee we're putting into the portafilter. Shot weight refers to how much espresso there is the cup at the end of extraction. Time indicates how long it's taken to reach our desired shot weight. By using all three of these we can make the adjustments needed to reach perfection in each cup.
