La Madrugada is our house dark roast blend featuring coffees that can handle the heat of a rich, dark roast. This blend is for the coffee enthusiast who wants the full flavour and richness of a dark roast without compromising on complexity.
Currently, La Madrugada is a single -origin coffee sourced from a family owned farm in Jalapa, Nicaragua. For 35 years, the Diaz family has been farming coffee on their plantation Ojo de Agua with a commitment to continuous improvement. This single origin coffee comes from their second plantation acquired in 2004 on which they embraced more experimental processing methods (i.e. carbonic maceration, honey processing, etc) and more exotic and unique varietals of coffee.
La Madrugada is roasted to emphasize dark chocolate, low acid, and caramelized sugars in the cup with a lasting finish. We've been enjoying La Madrugada as a heavy espresso, a rich french press, and a robust drip coffee.
