The Alvarez family has been producing delicious coffee in the hilly region of the Santa Ana Volcano in El Salvador for over a century. The area's fertile volcanic soils and mild climate provide the perfect conditions for coffee cultivation, and the Alvarez family has been taking advantage of it for four generations.
If you ever visit El Salvador, you should check out Finca La Reforma, owned by the Alvarez family. It's a beautiful place that covers 36 hectares and is mainly planted with Red Bourbon varietal coffee. The family uses the shade tree technique to grow the coffee plants, which means they're planted under the shade of tall native trees.
ABOUT THE PROCESS
These cherries are floated and dried slowly on raised beds and clay patios - a tradition for the region that offers more heat absorbency (endothermic) than concrete. This drying process offers more consistency in the cup. After drying, the beans are then processed to remove all traces of mucilage at the family’s mill, El Borbollon.
