Both. All coffees are kept whole bean until you select your preferred grind on the product page.

Underdog Espresso and Cachoeira Da Grama, are our most popular crowd pleasers. Both are medium roast and are suitable to all brewing methods.

Yes, we love decaf coffee. So we always carry a versatile decaf: The Fakeout. We also like to feature small lots of premium decaf coffee when we can. We believe that decaf coffee deserves respect and that decaf drinkers are the true coffee drinkers.

Yes, we regularly carry organic coffee and we show it on the label, but not all of our coffees are certified organic. That said, we buy coffee from farmers that use sustainable practices and care for their land. Becoming certified organic can be cost prohibitive for many farmers.

All our single origin coffees and all of our blends use only the Arabica species of coffee. We are not opposed to using a small amount of Robusta in a blend, but we prefer Arabica coffee for its variety of flavours, sweetness, and its relative lower amount of caffeine.

We recommend letting our coffee rest at least three days after the roast date for Filter, French Press, Aeropress, and Moka Pot. For Espresso, we recommend the coffee rest for a minimum of six days from the roast date before serving - this allows the beans to off-gas and makes it easier to work with and maintain your dial-in settings.

We recommend that you consume your coffee within 30 days of the roast date, being sure to reseal the zipper on the bag between uses. After 30 days the coffee doesn't go bad; it just isn’t as fresh tasting and vibrant.

We roast three days per week (Monday, Wednesday, and Friday) and ship on those days. You will find fresh roasts on the shelf in the afternoon on roast days.

Our white labels signify products that are available year-round, such as our espresso blends, filter blends, and our single-origins. Black labelled coffees are our rotating selection of exceptional coffees. These rare offerings boast unique flavour profiles and are available for a limited time only.

Single Origin” means that a coffee is not blended, but rather an offering of coffee from one traceable source, be it a particular farm or a smaller community of producers. Our single origin coffees are always roasted so as to showcase the unique characteristics of coffees grown, harvested, and processed at these origins.

We source and roast high quality green coffee, as such, we do not need to roast exceptionally dark to attain many of the qualities that our customers love about a delicious dark roast. Moreover, oily beans can cause clumping/clogging problems for many grinders and automatic coffee machines.

We do not flavour our coffee. The tasting notes on our labels represent the natural aroma, flavour, structure, and finish of the coffee and help describe the intrinsic features of a given coffee.

Our bags are recyclable and blue-bin friendly in Canadian recycling streams. These bags were made to be processed with ease by recycling facilities. The bags are manufactured by MTPAK, a world-leader in sustainable packaging. The bag formats are optimized for minimum waste and maximum efficiency.
