Tetsu Kasuya's Hario Switch Recipe for Perfect Coffee

Tetsu Kasuya, 2016 World Brewers Cup Champion, is well known for his 4:6 brewing method and has done it again. This time, he has developed what he calls 'The Devil's Recipe" for the Hario Switch. This brewing method is designed to bring out the best qualities in single-origin coffee and is becoming increasingly popular among coffee enthusiasts around the world.

Setup:

  •     20g of coffee (Slightly finer pourover grind)
  •     Hario Switch & V60-02 filter
  •     Water: 280g
  •     Water temperature: 90-95°C (70°C for immersion brewing)

Recipe:

  1. Rinse the Switch and filter with hot water, discard the water.
  2. Add 20g of coffee into the filter and shake it gently to flatten the bed.
  3. Pour 60g of water over the coffee, making sure to wet all the grounds evenly. Open the switch and let it drain for 30 seconds.
  4. Pour another 60g of water over the coffee, again making sure to wet all the grounds evenly. Let it drain for 45 seconds.
  5. Add more water to the kettle to decrease the temperature to 70°C, and close the switch.
  6. Add 160g of the 70°C water, let it steep for 30 seconds , then open the switch again.
  7. Let the drawdown occur. Aim for a grind size that allows the whole process to take 3:00

This brewing method results in a balanced and sweet cup with a clean finish. It's a great way to showcase the unique characteristics of single-origin coffee.
