This farm located in Apaneca, Ahuachapán. The Apaneca-Ilamatepec Mountain Range is considered The Gold Belt of Coffee from El Salvador. On this farm they grow orange and red Bourbon coffee varieties which are known for their floral notes and citrus acidity. Finca Noruega covers 27 hectares at an altitude of approximately 1,600 meters above sea level. This is quite high for Apaneca. Moreover, the coffee grows under a thick cover of shade trees. This makes the crop mature much more slowly than some of the other farms: this means the coffee really only comes into full production towards what is thought to be the end of the season in El Salvador.

Honey process is a method in which coffee cherries are picked and sorted, have their skins and pulps removed like other types of coffee—but are then dried without washing off the sticky-sweet outer layer of the fruit. Since honey process beans spend less time in water than washed beans do, less fermentation occurs, so not as much of the sugar in the bean is converted to acid.
